Coffee Ice Lollies - The Perfect Summertime Treat

While hanging out on Pinterest this morning (have you seen our boards?), I came across this lovely simple recipe for ice lollies made out of coffee and cream - they look deelish! 
 We've been so blessed with a gorgeous summer here in the UK, and I can't think of a nicer treat for a hot summer afternoon! (Full credit goes to Love and Cupcakes Blog for the recipe and pics!)


Coffee & Cream Ice Lollies
Makes approx. 10 ( depending on the size of your lolly molds!)
Ingredients
  • 2 cups extra-strong coffee
  • 2/3 cup single or whipping cream
  • 2/3 cup double cream
  • 1/4 cup icing sugar
Directions
1. Mix the coffee with single or whipping cream. Add a bit more cream or coffee, to get the coffee-cream balance to your taste .
2. Pour into ice lolly molds about 3/4th’s full and freeze for 1-2 hours.
3. Meanwhile, mix the double cream and icing sugar.
4. Top the semi-frozen coffee lolly molds with the sweetened double cream mixture. Insert lolly sticks and freeze until solid.
